It’ll be a little longer before we get a look at the bar–cum–big top’s dunk tank (we’re told the dude from the Feast of San Gennaro has been hired), but while eagerly awaiting the shitshow freak show of magicians, stilt walkers, and blockheads, we’ve gotten wind that there will be a $70 drink on the menu called, yes, the Dunk Tank, and it’ll consist of two gallons of vodka, rum, gin, and fruit juice (so, sort of like a Long Island iced tea) — served with a “You Just Got Tanked on the Dunk Tank” souvenir glass. Culinary news about Ming Tsai Picks His Favorite Downtown Dumpling – Chinese-American chef Ming Tsai, of the Emmy-nominated PBS series Simply Ming , is hosting an extravagant Dim Sum & Disco Brunch at the New York Wine & Food Festival, but he still appreciates cheap fried pork dumplings. Tsai joined us last week on a pot-sticker crawl that covered dumpling spots throughout downtown Manhattan, including Fried Dumpling , Tasty Dumpling , Vanessa’s Dumplings , Vanessa’s Dumpling House , Joe’s Shanghai , Shanghai Cuisine , Prosperity Dumpling, Dumpling Man , and Plump Dumpling . (Tsai enjoyed the variety of fillings at Rickshaw , which, incidentally, appears on The Tyra Banks Show today , but its new, steamed-only approach excluded them from consideration.) He rated seared specimens on a ten-point system for taste; five for texture; and another five awarded at his discretion

Seider has teamed with a fellow Mercer Kitchen alum, Hamid Rashidzada (who also has a hand in Esperanto , down the street), and the two are treating Summit Bar as both their laboratory and their living room.
